Banana Crack Cookies



Our friends, Deb and Glenn, gave us this great
recipe for Banana Crack Cookies. It's a great
way to use bananas that are getting a little
older than you'd like and another way to bake
with bananas other than making banana bread.
They're awesome!


Banana Crack Cookies

3/4 cup butter
3/4 cup brown sugar
1 egg
1 tsp vanilla
2 ripe mashed bananas
1/4 tsp salt
2 cups flour
1 tsp baking soda
(can also add nuts if desired)

Mix all ingredients together, drop by spoonfuls onto a
cookie sheet. Bake for 8-10+ minutes at 350 degrees.

Frosting:
3 Tbsp brown sugar
2 Tbsp cream or milk
2 Tbsp butter

Bring frosting ingred. just to a boil, then add enough
powdered sugar to make frosting consistency. Add 1/2
tsp vanilla at end, frost cookies when warm for easier
spreading.

Then, ENJOY!

I made the banana frosted "crack" cookies this morning but I tweaked the recipe a bit:
OMIT 1/4 c butter and 1/4 c brown sugar and ADD a third banana and 1/2 c more flour. YUM! Cooked at 375 F for 10 minutes at high altitude (4600 feet above sea level). Next time, let's try Splenda and reduce even more calories.

something bout the name turns me off.
